Squash Casserole

Squash Casserole by J.E.B. Spredemann

In my upcoming release, An Amish Reward, Becky serves Squash Casserole. Imagine my delight when I opened Esther Keim’s cookbook ‘A Taste of Amish Cooking’ and found a recipe for Squash Casserole. My mother also makes a squash casserole that is dynamite, and maybe I’ll share that someday, but I thought an authentic Amish recipe was called for in this instance. Enjoy!

SQUASH CASSEROLE

4 c. cubed squash
1 lb. sausage (cooked and drained)
1 c. dry bread crumbs
¼ c. chopped green pepper
¼ c. chopped onion
½ c. grated parmesan cheese
2 eggs (beaten)
½ c. milk
½ tsp. salt

Place squash and small amount of water in sauce pan. Cover and cook 8-10 minutes or till tender. Drain. Add all ingredients and mix well. Pour into greased 11 x 7 x 2 inch baking dish. Bake uncovered at 325° for 30-35 minutes.
