In my upcoming book, An Amish Deception, one of Jacob King’s favorite treats is Leah’s Zucchini Applesauce Bread. My friend, Esther Keim, just so happens to have a recipe for it in her book, A Taste of Amish Cooking (and more).

Heart-Touching Amish Fiction

ZUCCHINI APPLESAUCE BREAD

INGREDIENTS:

3 eggs
1 ½ c. white sugar
1 c. brown sugar
½ c. oil
¼ c. applesauce
1 T. vanilla
3 tsp. cinnamon
1 tsp. salt
1 tsp. soda
3 c. flour
2 c. zucchini (grated and drained)

DIRECTIONS:

In a large mixing bowl, beat eggs, add sugar, then mix. Add oil, applesauce, and vanilla. Mix well. Stir in other dry ingredients. Fold in zucchini last. Divide batter into 2-3 loaf pans. Bake at 350 degrees for 1 hour.
