Apple Muffins

Recipe for Low-Fat Apple Muffins by J.E.B. Spredemann

Want a recipe that is both healthy and delicious? Of course you do! Round up your apples and get ready to make some muffins. YUM!


YIELD: Serves 18


1 whole egg
2 egg whites
1 ½ c. brown sugar
1 c. apple sauce
1 tsp. cinnamon
½ tsp. Himalayan sea salt
1 tsp. baking soda
½ tsp. baking powder
2 Tbs. wheat germ
1 tsp. lime juice
2 c. unbleached flour (or wheat flour)
3 c. diced apples
½ c. chopped walnuts


Blend apple sauce, brown sugar, and eggs in large bowl. Add remaining ingredients (except apples and walnuts) and mix well. Finally, blend in walnuts and apples. Pour into paper-lined muffin pans and bake at 350 degrees for 20-25 minutes. Serve warm.
