Pumpkin Cookies by J.E.B. Spredemann

It’s Friday and we have the perfect recipe from  J.E.B. Spredemann to make this weekend. Put on some tea, grab a good book, and whip up a batch of Pumpkin Cookies!

Pumpkin Cookies by J.E.B. Spredemann

Cream together:

1/2 c. butter
1 T. cold coconut oil
1 c. sugar

Then add:

1 c. pumpkin
2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1 tsp. vanilla
1 c. date pieces (optional)
1/2 c. chopped pecans (optional)

Mix well. On greased cookie sheet, drop by spoonful, and bake at 375 degrees for 10-12 minutes or until done.
