Banana Nut Bread by J.E.B. Spredemann

Since my Friday Feature mentioned Leah baking Banana Walnut Muffins, I thought a similar recipe was in order. A special thank you to Esther Keim for sharing with us. If you love Amish cooking, pick up a copy of her book at the link below. (Recipe used by permission.)

2/3 c. sugar
1/3 c. softened margarine
2 eggs
3 Tbsp. milk
1 c. mashed bananas
2 c. flour
1 tsp. baking powder
½ tsp. soda
½ tsp. salt
½ c. nuts (if desired)
Mix sugar, margarine, and eggs. Stir in milk, bananas, flour, baking powder, soda, and salt. (Include nuts, if desired.) Pour into well-greased 9x5x3 loaf pan. Let stand 20 min. before baking. Bake until it tests done, 50-60 min. at 350 degrees.
