Amish Peanut Butter by Jennifer Spredemann

When I submitted my latest manuscript Unlikely Santa to my editor, I received a note back asking about the ‘peanut butter spread’ I’d mentioned in the book. I explained to my editor (who lives in the Pacific Northwest) that it is a common staple at Amish gatherings. So, in case anyone else is curious, here’s a recipe I found in my friend Esther’s cookbook, A Taste of Amish Cooking.

Heart-Touching Amish Fiction

Amish Peanut Butter

2 c. brown sugar
2 Tbsp. corn syrup
2 c. peanut butter
1 c. water
1 tsp. maple flavoring
1 16 oz. jar marshmallow cream

Combine brown sugar, water, corn syrup, and maple flavoring in a sauce pan; bring to boil. Remove from heat and let cool. Blend together the peanut butter and marshmallow cream. Stir cooled syrup into the peanut butter mixture.
