Autumn evenings make me yearn for comfort food. Amish Corn Fritters really fit the bill and are so super de duper easy to make!
- Corn (canned okay)
- Eggs (2 per cup of corn)
- Salt (optional)
You can used canned corn for this but make certain to drain it. Simply separate two eggs for each cup of corn. Beat the egg whites util they are stiff before you add the yolks and corn. Form the mixtures into patties and fry them in unsalted butter. You can add some salt to taste.
The thing I love about this recipe is that you don’t waste the egg whites (or yolk). I always feel so guilty when I separate eggs and have to throw one of the parts away. Of course, with so many chickens running around our place, it’s not too bad, I suppose. Still, I like being able to use both parts.
